Lunch box friendly high protein scrolls

I posted these on my Instagram stories and many of you asked for the recipe. I'm always on the hunt for lunch box ideas not only for the kids but also for myself and it sounds like a lot of you are too! These little lunch box scrolls are great for kids and adults alike. The greek yoghurt in the dough adds to the protein content and you can really top them with whatever you please. I made these with olives, bacon, cheddar cheese and parsley and they were delicious.



Ingredients:

1.5 - 2 cups organic flour (I used Rye but you could really use any flour your like)

1 cup organic greek yoghurt


Grated cheddar cheese

3 rashes bacon

1/2 bunch of parsley

1/2 cup olives

Salt and pepper to taste


Method:

  1. Preheat oven to 180 degrees C.

  2. Combine the 1.5 cups of flour and yoghurt in a bowl and stir to combine.

  3. Turn the dough out onto a well floured surface and knead till it comes together smoothly. If too sticky, add more flour.

  4. Roll out the dough to a rough rectangle shape aiming for a thickness of no more than 1 cm.

  5. Now add your toppings, making sure you cover the whole surface of the dough. Be generous with your toppings. Add salt and pepper to taste.

  6. Carefully roll the dough up to form a log. You can shape it a little and fold the ends to stop any filling falling out.

  7. Using a sharpe knife, cut into 2cm rounds and place on a lined baking tray. Form into circles

  8. Bake in the oven for 15 - 20 mins or until golden.


These freeze well so they can be made in advance. Enjoy cold or slightly warmed.
