Breakie Custard: An easy protein rich breakfast or snack




I'm always on the hunt for a quick and easy protein rich breakfast that the whole family will enjoy and Breakie Custard has become a bit of a staple in our house. I have mentioned this as a breakfast/snack option to a few clients recently who were intrigued and maybe a little surprised that I suggested custard for breakfast! It's acutally a really simple, healthy breakfast option, so I thought I'd share it with my community.

I make mine in a Thermomix so it is extremely quick and easy, but it’s still an easy meal to make on the stove top- you’ll just need to stand and stir it for a few minutes!

 

Ingredients: 

  • 4-5 eggs

  • 500ml milk of your choice (I like it with Cocoquench or Full cream jersey milk, but you could use any milk you like)

  • 3 tablespoons potato starch or arrowroot powder/tapioca flour

  • 2 tablespoons collagen or whey protein powder or mix

  • Pinch of cinnamon or turmeric or vanilla or mix

  • Sweetener (stevia, honey, rice malt syrup, black strap molasses). I generally use about two tablespoons honey.


Method:

1.     Place all ingredients into a saucepan (or thermomix) and whisk really well to combine.

2.     Slowly heat the saucepan stirring as you go until a custard forms (~5-8 mins). For thermomix, speed 3, 95 degrees, 8 mins.

3.     Once ready the custard will thicken. You can then serve it out with a little honey drizzled on top. It's also great with a hefty sprinkle of granola/nuts or seeds over the top.


Note:

I usually use this custard as the 'milk' over my morning muslie. This amount usually feeds me and the two kids with added toppings. If I have leftovers, I add chia seeds and create lunch box friendly chia custard puddings.
